Thanksgiving-inspired Sandwich + Plantain Crisps

Ingredients

  • Food For Life Sprouted Bread
  • Mayo
  • Leftover cranberry sauce
  • Spinach or arugula
  • Goat cheese
  • Mayo
  • Leftover carved turkey or tofu turkey slices
  • Solula Sea Salt Plantain Crisps

Directions

  1. To assemble a sandwich, spread a layer of mayo on one slice of bread and a generous layer of cranberry sauce on a second slice of bread.
  2. Layer a handful of spinach or arugula on top of the cranberry sauce, followed by turkey and crumbled goat cheese. Lay the second piece of bread over the top.
  3. Cut in half and serve with plantain crisps!
  4. Optional – add the plantain crisps IN the sandwich for added crunch.
