Ingredients
- 1 head lacinato kale, chopped
- 1 large honey crisp apple, diced
- ½ cup diced red onion
- 1/3 cup pepitas
- ½ cup dried cranberries
- 1/3 cup olive oil + 1 tbsp
- ¼ cup red wine vinegar
- 1 ½ tbsp pure maple syrup
- 1 tbsp dijon
- Pinch of salt and pepper
- Solula Garlic Plantain Crisps, crushed to top
Directions
- Place the kale into a large mixing bowl with 1 tbsp olive oil. Gently massage the olive oil into the kale until the kale is soft and not as tough.
- Add the apple, pepitas, red onion, and cranberry to the kale.
- In a separate bowl, whisk together the remaining olive oil, vinegar, maple, dijon, and a pinch of salt and pepper until combined. Pour desired amount of dressing over the salad and toss.
- Serve with crushed plantain crisps on top and enjoy!
