Fall Chopped Kale Salad

Ingredients

  • 1 head lacinato kale, chopped
  • 1 large honey crisp apple, diced
  • ½ cup diced red onion
  • 1/3 cup pepitas
  • ½ cup dried cranberries
  • 1/3 cup olive oil + 1 tbsp
  • ¼ cup red wine vinegar
  • 1 ½ tbsp pure maple syrup
  • 1 tbsp dijon
  • Pinch of salt and pepper
  • Solula Garlic Plantain Crisps, crushed to top

Directions

  1. Place the kale into a large mixing bowl with 1 tbsp olive oil. Gently massage the olive oil into the kale until the kale is soft and not as tough.
  2. Add the apple, pepitas, red onion, and cranberry to the kale.
  3. In a separate bowl, whisk together the remaining olive oil, vinegar, maple, dijon, and a pinch of salt and pepper until combined. Pour desired amount of dressing over the salad and toss.
  4. Serve with crushed plantain crisps on top and enjoy!
