Ingredients
Cilantro Garlic Sauce
- ½ cup mayo
- ½ head cilantro
- 1 jalapeno, seeded and diced
- 1 lime, juiced
Refried Beans
- 1 can pinto beans (not drained)
- ¼ teaspoon cumin
- ½ teaspoon salt
- Pinch of pepper
Other
- Sea Salt Solula Tostones
- Cilantro, to garnish
- Jalapeno slices, to garnish
- Lime slices, to garnish
Directions
- Make the sauce by placing all ingredients into a food processor. Pulse until completely combined and no big chunks remain.
- Make the refried beans by combining all ingredients into a small saucepan over medium heat. Once simmering, use a potato masher to mash the beans. Reduce the heat to medium-low and allow to simmer for about 5-10 minutes, mashing every minute or so, or until completely thickened up. (The beans will seem runny at first, but will thicken up, so be patient!) Taste and adjust salt if needed.
- Pour the refried beans into a serving dish and drizzle desired amount of the sauce over top. Garnish if desired, and serve immediately with tostones!
