Ingredients
- 1 pound lean ground beef
- 1 packet taco seasoning (for 1 pound of meat)
- 1 tbsp avocado oil
- 2 small red bell peppers, thinly sliced
- 1 small red onion, thinly sliced
- Salt and pepper, to taste
- 1 ½ cups cooked white rice
- Cilantro garlic sauce or sour cream, to serve
- Cilantro, to garnish
- Jalapeno slices, to garnish

Directions
- Cook the ground beef with the taco seasoning according to package directions.
- In a large skillet, heat about 1 tablespoon of avocado oil over medium-high heat. Once hot, add the onion and bell pepper to the pan along with a pinch of salt and pepper. Saute for about 5-8 minutes or until the peppers and onions are tender and slightly charred.
- Assemble the bowls by splitting the rice between four serving bowls, followed by the beef and veggie fajitas.
- Garnish the bowls as desired and serve with a generous handful of Solula!
