Pumpkin Chili

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, diced
  • 1 pound ground beef
  • 2 tbsp tomato paste
  • 1 tbsp chili powder
  • 1 tbsp paprika
  • ½ tsp cumin
  • ½ tsp oregano
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 3 oz can diced green chilis
  • ½ cup pumpkin puree
  • 13 oz can fire roasted diced tomatoes
  • 13 oz can black beans, drained
  • 13 oz can kidney beans, drained
  • 1 tsp salt
  • ¼ tsp black pepper
  • 2 cups beef broth
  • Solula Garlic Plantain Crisps

Directions

  1. Heat a large pot over medium heat and add the oil.
  2. Once hot, add the onion and saute for about 3-5 minutes. Add the garlic and saute for another minute.
  3. Add the ground beef and cook until completely cooked through.
  4. Add the tomato paste, chili powder, paprika, cumin, oregano, onion powder, and garlic powder. Stir and cook for another minute/
  5. Add the green chilis, pumpkin beans, salt, pepper, and beef broth. Stir to combine.
  6. Bring to a simmer and reduce the heat to low. Cover and let simmer for 30 minutes to one hour. The longer it simmers/sits, the tastier it’ll be!
  7. Serve with Solula Garlic Plantain Crisps, green onion, and enjoy!
