Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, diced
- 1 pound ground beef
- 2 tbsp tomato paste
- 1 tbsp chili powder
- 1 tbsp paprika
- ½ tsp cumin
- ½ tsp oregano
- ½ tsp onion powder
- ½ tsp garlic powder
- 3 oz can diced green chilis
- ½ cup pumpkin puree
- 13 oz can fire roasted diced tomatoes
- 13 oz can black beans, drained
- 13 oz can kidney beans, drained
- 1 tsp salt
- ¼ tsp black pepper
- 2 cups beef broth

Directions
- Heat a large pot over medium heat and add the oil.
- Once hot, add the onion and saute for about 3-5 minutes. Add the garlic and saute for another minute.
- Add the ground beef and cook until completely cooked through.
- Add the tomato paste, chili powder, paprika, cumin, oregano, onion powder, and garlic powder. Stir and cook for another minute/
- Add the green chilis, pumpkin beans, salt, pepper, and beef broth. Stir to combine.
- Bring to a simmer and reduce the heat to low. Cover and let simmer for 30 minutes to one hour. The longer it simmers/sits, the tastier it’ll be!
- Serve with Solula Garlic Plantain Crisps, green onion, and enjoy!
