Ingredients – serves 2
- 1 head romaine lettuce, chopped
- 1 cup black beans
- 1 cup halved cherry tomatoes
- ½ cup thinly sliced radish
- ⅓ cup finely diced red onion
- ⅓ cup crumbled cotija cheese
- Crushed Solula Caribbean Lime Tostones, to top
- Chopped cilantro, to top
Chipotle Tahini Dressing
- ¼ cup tahini
- 3 tbsp lime juice
- 2 tbsp extra virgin olive oil
- 1 chipotle pepper in adobo, finely chopped
- 1 large clove garlic, grated
- 1 tsp salt, or to taste
Directions
- Make the dressing: Whisk together all the ingredients for the dressing, adding a splash of water or more to thin the dressing to a drizzled consistency.
- Assemble the salad: Divide the lettuce between two serving bowls. Top with the black beans, cherry tomatoes, radish, onion, cotija, crushed tostones, and cilantro. Drizzle with desired amount of dressing and enjoy!
