Southwest Salad with Chipotle Tahini Dressing

Ingredients – serves 2

  • 1 head romaine lettuce, chopped
  • 1 cup black beans
  • 1 cup halved cherry tomatoes
  • ½ cup thinly sliced radish
  • ⅓ cup finely diced red onion
  • ⅓ cup crumbled cotija cheese
  • Crushed Solula Caribbean Lime Tostones, to top
  • Chopped cilantro, to top


Chipotle Tahini Dressing

  • ¼ cup tahini
  • 3 tbsp lime juice
  • 2 tbsp extra virgin olive oil
  • 1 chipotle pepper in adobo, finely chopped
  • 1 large clove garlic, grated
  • 1 tsp salt, or to taste



  1. Make the dressing: Whisk together all the ingredients for the dressing, adding a splash of water or more to thin the dressing to a drizzled consistency.
  2. Assemble the salad: Divide the lettuce between two serving bowls. Top with the black beans, cherry tomatoes, radish, onion, cotija, crushed tostones, and cilantro. Drizzle with desired amount of dressing and enjoy!
