Loaded Mediterranean Hummus


½ cucumber, finely diced
¼ red onion, finely diced
½ red bell pepper, finely diced
1-2 tbsp chopped fresh mint
¼ cup sliced green or kalamata olives
½ lemon, juiced
Pinch of salt and pepper
1 ½ cups traditional homemade or store-bought hummus
Olive oil, to drizzle
Za’atar, to serve
Solula Roasted Garlic Tostones, to serve


In a small bowl, toss the cucumber, red onion, bell pepper, mint, olives, lemon juice, and a pinch of salt and pepper. Once combined, set aside.
Scoop your hummus onto desired serving plate and spread. Top with the cucumber mixture. Drizzle with a olive oil and a generous sprinkle of Za’atar.
Serve immediately with Solula Tostones.
