Ingredients
- 1/3 cup Extra Virgin Olive Oil
 - ½ lemon, juiced and zested
 - 1 tbsp, apple cider vinegar
 - 1 tbsp spicy brown mustard
 - 1 tbsp honey
 - Pinch of salt and pepper
 - 8 cups mixed greens
 - ½ cup frozen peas, thawed
 - ¾ cup snap peas, chopped
 - 2 tbsp fresh dill
 - Solula Roasted Garlic Tostones
 
Directions
- Make the dressing by whisking together the olive oil, lemon juice and zest, apple cider vinegar, mustard, honey, and a pinch of salt and pepper until combined.
 - In a large bowl, add the mixed greens, peas, snap peas, and the dill.
 - Crush a large handful of the plantain chips over the salad. Pour desired amount of dressing over the top. Toss to combine and enjoy!
