Dill Spring Pea Salad


  • 1/3 cup Extra Virgin Olive Oil
  • ½ lemon, juiced and zested
  • 1 tbsp, apple cider vinegar
  • 1 tbsp spicy brown mustard
  • 1 tbsp honey
  • Pinch of salt and pepper
  • 8 cups mixed greens
  • ½ cup frozen peas, thawed
  • ¾ cup snap peas, chopped
  • 2 tbsp fresh dill
  • Solula Roasted Garlic Tostones


  1. Make the dressing by whisking together the olive oil, lemon juice and zest, apple cider vinegar, mustard, honey, and a pinch of salt and pepper until combined.
  2. In a large bowl, add the mixed greens, peas, snap peas, and the dill.
  3. Crush a large handful of the plantain chips over the salad. Pour desired amount of dressing over the top. Toss to combine and enjoy!
